DIRECTIONS

Beer Cheese Soup with Hale's Wee Heavy Winter Ale

Ingredients:

1 cup sliced carrots

1 cup sliced celery

1 cup chopped onions

1 stick butter

1/2 cup flour

1 cup Hale's Wee Heavy WInter Ale

1 cup milk

1 cup grated sharp cheddar

1 tsp granulated garlic

Salt, pepper & paprika to taste

4 hallowed-out sour dough bread bowls

 

Instructions:

Sauté carrots, celery and onions with the butter until soft.  Add the flour and continue to sauté for another minute.  Add Hale's Wee Heavy Winter Ale and milk.  Wait for the soup to thicken before adding the cheese.  Add the garlic and other seasonings to taste.  Puree and strain (optional) into the hallowed out bread bowls.  Serving suggestion:  serve in mini boules (small bread bowls) over arugula with a citrus dressing to make the dish look like a bird's nest!
