DIRECTIONS

Bacon Wrapped Scallops with Hale's Wee Heavy Winter Ale Cream Sauce

Ingredients for cream sauce:

1 cup Hale's Wee Heavy Winter Ale

1 cup cream

1 stick butter

2 tbs chopped shallots

Juice of 1/2 lemon (2 tbs)

Lemon zest

1/4 tsp fresh thyme

  

Ingredients:

Diver 'Day Boat' U/10 Scallops

Bacon strips

Olive oil

Salt & pepper to taste

 

Instructions for cream sauce:

Mix Hale's Wee Heavy Winter Ale with the chopped shallots, lemon juice and lemon zest. Simmer until volume is reduced by half. Add the cream and fresh thyme and reduce again by half. Remove from heat, add the butter and spoon onto dishes. Cook the bacon-wrapped scallops and then place the scallops on top of the cream sauce.

 

Instructions for scallops:

Sear bacon-wrapped scallops on pan with olive oil, leaving scallops opaque in the middle. CAUTION: do not overcook-- they become like rubber! Season to taste with salt and pepper. Serving suggestion: place on a bed of sauteéd spinach.
